Abstract
We applied an AC electric field during freezing to improve the freshness of perishable food such as purple sea urchin. The AC voltage was generated with a transformer that had an amplitude of 10 kV and a frequency of 50 Hz. High AC voltage was applied to a metal shelf located in an incubator. The temperature in the incubator was controlled in the range from −15 to 30 °C. Protein in the drip eluted from the sample was analyzed to estimate the freshness of the perishable foods. The experimental results showed that the use of AC voltage during freezing is effective for preserving the freshness of the perishable foods.
