8 Application, current and future trends of bacterial and fungal polyphenol oxidases (laccases)

Abstract
Laccase belongs to blue multicopper family of enzymes containing various enzymes with diverse biological functions. Mainly, laccases oxidize compounds that have phenols (-OH), anilines (-NH2), arylamines, and ascorbic acid. They are ubiquitously found in bacteria, fungi, and in higher plants and possess numerous implementations in bioremediation of xenobiotic compounds and in delignification and degradation of organic compounds. Laccase is a beneficial enzyme for a variety of biotechnological applications due to its broad range of substrate specificity. This chapter reviews the structural attributes and occurrence of laccases, with major focuses on two main domains of producers: the bacterial and fungal sources. Furthermore, we describe the applications of laccases across a variety of industrial and biotechnology sectors, including textile and agro-based industries, pharmaceutical industries, and bioremediation.
