In the late 19th century, the human diet underwent a revolutionary transformation. What has remained largely unconsidered is that these changes also had critical effects on non-eating (e.g. dieting, vegetarianism, preventive health, hunger strikes, and food scarcity). For the first time, the volume examines the multi-faceted history of non-eating. Many of the essays touch upon major areas of societal conflict.
