5 Polyphenol oxidases in plants: diverse role and functions

Abstract
Polyphenol oxidases (PPOs) are oxygen-dependent metalloenzymes ubiquitous in plants and play an important role in browning reactions. In higher plants, the enzyme protects plant against pest attacks. It is assumed that the PPOs modulate photosystem I or photosystem II reduction of molecular oxygen under low oxygen tension. These are also known to produce compounds that are able to oxidize phenolic molecules hence provide scope for biotechnological applications in food processing, bioremediation, and an increased yield in crops. Biochemical aspects in these enzymes are widely studied in terms of the metabolic reactions in pathways, enzyme activities, and inhibition assays. PPOs play their role in the development of plants. Regarding the physiological and molecular functioning of PPO, the correlation between PPO expression and stress responses is well studied in different plants. Polyphenols are the most important metabolites playing crucial role in antioxidant activities in some of the plants. Hence, it is interesting to investigate the diversified role of PPOs in different plant species.
